Maintaining good kitchen hygiene practices is essential to safeguard the health of not only people working in a kitchen environment but also the recipients of the food produced there. Ensure food preparation staff follow the hand hygiene tips, particularly after using the washroom.
- Dirty damp cloths can harbour and spread bacteria. Use disposable dish cloths or different cloths for ‘clean’ and ‘dirty’ jobs.
- Food contact surfaces should be cleaned regularly with a detergent or soap & water
- Rubbish bins are a breeding ground for bacteria. Use a pedal bin to avoid touching the lid and always ensure it shuts properly. They need to be cleaned and disinfected regularly.
- Store individual food items separately with meat always at the bottom.
